These apple pies are not only delicious; baking them inside the hollowed apples also makes them pretty darn cute. Bake these in the 2 1/2 qt. cast iron roaster or the 2 1/2 qt. rectangular stoneware dish.8 – 10 Granny Smith apples (Make sure they can stand on their own) 1 1/2 teaspoons cinnamon 1/3 cup sugar 1 1/2 tablespoons brown sugar Pie crust of your choice Melted butter Extra cinnamon and sugar for sprinklingCut the tops off of 6 apples and discard. Remove the insides of these apples with a spoon or melon baller, being careful not to puncture the peel. Set the hollowed apples aside.Next, remove the skin from the remaining apples and slice very thinly. These apple slices will provide the filling for the apples you’re baking.Mix the sliced apples with sugar, brown sugar and cinnamon. Scoop this filling into the hollow apples.Roll out the pie crust and slice into 1/4-inch strips. Cover the tops of the apples in a lattice pattern with the pie crust strips. Use a fork to crimp the edges in place. Brush a small amount of melted butter over the crust and sprinkle with a little cinnamon and sugar. Place the apples in the roaster or baking dish and add just enough water to cover the bottom of the pan.
